Tasty And Easy Vegetable Broth |

This is a great soup, cheap to make, easy and tasty. Loads of veg, so very good for you and will definitely keep you warn in the winter! Ingredients:
1 x diced onion |
1 x tin of tomatoes |
3 x cubed potatoes |
3 x finely chopped carrots |
4 sticks of celery chopped in to small pieces |
handful of red lentils |
handful of green lentils |
handful of white rice |
2 x stock cubes |
2 tablespoons of vegetable oil |
bunch of flat leave parsley |
bay leave |
salt and pepper |
Directions:
1. This will probably make about 1.5 litres of soup and can be defrosted in single portions 2. Heat the vegetable oil in the pot on a medium heat 3. Add the onions and cook for 5 minutes 4. Add the celery, carrots and potatoes and sweat for 5 - 10 minutes 5. Add boiling water until it just covers the vegetables and add the stock cubes 6. Add the tomatoes, bay leave, rice and lentils 7. Bring to a boil, then cover and simmer on a low heat for 45-60 minutes stirring every 10 minutes topping with water when needed 8. When the carrots and potatoes are very soft and the rice and lentils are fully cooked add a handful of chopped flat leafed parsley and simmer for 5 minutes 9. Add plenty of black pepper and salt to taste 10. Serve garnished with some parsley |
