I got this recipe from a coworker years ago. It is one of those great recipes that you want to always have for anytime. These are easy and taste great. Anytime I take these to a new group, the recipe is always asked for. Ingredients:
2 cups flour |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1 cup butter, softened |
3/4 cup packed brown sugar |
3/4 cup granulated sugar |
2 large eggs |
1 teaspoon vanilla |
2 cups quick-cooking oats |
2 cups corn flakes |
1 cup coconut |
1/2 cup chopped walnuts or 1/2 cup pecans |
Directions:
1. Preheat oven to 375 degrees. 2. In a small bowl, combine flour, baking powder, baking soda and salt; stir to mix and set aside. 3. In large bowl beat butter and add both sugars; beat until fluffy. 4. Beat in eggs and vanilla and add flour mixture; mixing until well combined. 5. Stir in oats, cornflakes, coconut and nuts. 6. Roll Dough into one inch balls and place on cookie sheet lined with parchment paper; flatten slightly. 7. Bake 8-10 minutes. |
