This is a lovely dish both in flavor and look. It can be made relatively quickly using frozen and cooked mashed potatoes, but the real deal is with homemade. Come to think of it, it could be a great way to use up leftover mashed potatoes. Ingredients:
2 lbs ground beef |
1/3 cup olive oil, extra-virgin |
1 tablespoon lemon juice |
1/2 teaspoon dijon mustard |
1/2 cup dry breadcrumbs |
1/2 onion, chopped |
2 eggs, beaten |
1 teaspoon salt |
1/2 teaspoon pepper |
2 garlic cloves, minced |
2 cups mashed potatoes, hot (6 medium) |
1 egg, beaten |
1/2 cup mayonnaise |
1 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup parmesan cheese |
sliced tomatoes, olives, mushrooms, pimiento or parsley, as desired |
Directions:
1. Combine the first 10 ingredients (everything up to the mashed potatoes). 2. Mix well & shape into an oval loaf in a shallow baking dish. 3. Bake at 350° for 1 hour. 4. Remove from oven & place on a baking sheet or heat-proof serving platter. 5. Combine potatoes, egg, mayo, salt, pepper, and cheese. 6. Frost the meatloaf. 7. Broil until potato topping is golden brown & puffy. 8. Garnish with tomato, olives, mushrooms, pimiento, &/or parsley as you like. |
