Pork dumplings in broth from Pleyn Delit Ingredients:
2 cups ham |
1/4 cups currants |
1/4 teaspoons salt |
2 teaspoons mixed spices |
1 egg |
2 cups broth |
250 grams wheat flour |
125 ml water |
1/2 egg |
1/4 tbsp vegetable oil |
Directions:
1. In a small bowl mix one cup of ground cooked pork, currants, salt, half the spices and one egg. Make noodle dough by mixing the flour, water and eggs in a food mixer for 5 minutes. Turn out onto a floured surface and knead the dough on another 5 minutes. Knead in the vegetable oil at the end. Wrap the dough in cling film and put in the fridge for 5-10 minutes to rest. Roll it out thinly then cut into 2 inch squares. Moisten the edge of the squares with water, add a spoonful of mixture into the middle and fold over to make a triangular shape. Press edges firmly together to seal. Boil in salted water until the dough is cooked. Add the other cup of cooked ground pork to the broth with the rest of the spices, heat through, add the tartlets and serve. |
