A fantastic addition to those weekend brunches - Ingredients:
7 -8 ounces puff pastry (store-bought) |
1/2 cup cottage cheese |
1/2 cup 15% cream 1 tbsp. flour |
1/4 teaspoon salt |
black pepper |
2 tablespoons vegetable oil |
4 ounces bacon |
vegetable oil |
1/2 medium onion, quartered and sliced very thin |
Directions:
1. PASTRY: Lightly flour your counter, and roll the chilled dough into a 20-inch square, less than 1/8-inch thick. Cut into 4 disks 8-inches across. Carefully transfer the disks to the oiled pastry sheet. Cover with plastic wrap and refrigerate for 1/2 hour or longer. 2. Preheat the oven to 425°F Drop the cottage cheese into the food processor and process about 1/2 minute, until smooth. Add the other ingredients of the filling. Process again to blend. 3. Cut the bacon into slices. Oil a frying pan lightly, set over moderate heat, and cook the bacon 1 minute, then stir in the onions. Toss several minutes until the onions have softened but are not yet tender. 4. Leaving a 1/4 inch border free, spread the cheese mixture over the chilled. 5. pastry disks. Scatter the bacon and onions on top. Bake in upper middle level of the oven for 12-15 minutes, until the pastry is golden brown, and the topping is browned lightly. |
