I was looking for an almond cake, and after the help of all my friends I got this excellent recipe, hope you like it. this cake was very popular in the north west part of Spain
Ingredients:
1 cup sugar
1/2 lb almonds, finely ground.
7 eggs (separated)
3 tbsp. amaretto liquor
a few extra slivered almonds for garnish
powder sugar for decoration
Directions:
1. Cream sugar, and egg yolks until light and fluffy.
2. Stir in almonds and amaretto.
3. Beat egg whites until fluffy but not dry.
4. Stir in Egg whites into almond mixture slowly.
5. Pour into 1 greased 8 inch pans and sprinkle some slivered almonds.
6. Bake for 35 minutes at 300 degrees.
7. Cakes should be lightly browned. Cool breifly.
8. Sift powder sugar on top
