This is an outstanding vinaigrette and one that I make often. It is great over salads or even tossed with tomatoes, cucumbers and onions. It is bursting with flavor.
Ingredients:
3 cups extra virgin olive oil
1 cup champagne vinegar
1 large egg yolk
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 tablespoons parsley fiely minced
1 tablespoon chives snipped into very small bits
2 teaspoons chervil minced
1 teaspoon tarragon minced
1 tablespoon egg white sieved
2 tablespoons picked cucumbers finely minced
1 tablespoon capers
3 shallots finely chopped
Directions:
1. Whisk all ingredients except egg yolk in a bowl until well mixed then add egg yolk and whisk vigorously to emulsify. 2. Refrigerate and rewhisk before using.
