An elegant, colorful, delicious soup; your family and guests will love it! Ingredients:
2 tbsp butter |
1/4 cup finely chopped onion |
1/2 cup white wine |
two 500 ml cartons pea or asparagus soup |
3 tbsp tarragon leaves, finely chopped |
4 large, fresh scallops |
salt and pepper |
tarragon sprigs for garnish |
twist of lemon peel for garnish |
Directions:
1. Melt 1 tbsp butter in saucepan over medium heat 2. Add onions and sauté until tender (about 3 minutes) 3. Add the wine and cook until nearly evaporated 4. Stir in the tetripack soup 5. Stir in tarragon to taste 6. Heat until hot, then reduce heat and let slowly simmer to keep hot 7. Pat scallops dry 8. Remove the tough small muscle on the side of the scallops 9. Melt remaining butter over high heat 10. Sprinkle both sides of scallops with salt and pepper 11. When butter starts to sizzle, add scallops and cook 1 1/2 to 2 minutes 12. Ladle the soup into bowls, adding the scallop, small sprig of tarragon, and lemon twist |
