Prep: 2 minutes; Cook: 18 minutes. At testing, we broiled the lamb chops on the middle rack of the oven. Ingredients:
6 (4-ounce) lamb loin chops, trimmed |
3 garlic cloves, halved |
cooking spray |
3 tablespoons dijon mustard |
3/4 teaspoon dried tarragon |
1/2 teaspoon salt |
1/4 teaspoon coarsely ground black pepper |
1/4 teaspoon paprika |
Directions:
1. Preheat broiler. 2. Rub both sides of each lamb chop with garlic. Place chops on a broiler pan coated with cooking spray. 3. Combine mustard, tarragon, salt, and pepper in a small bowl; spoon half of mustard mixture evenly over lamb. Broil 9 minutes. Turn; spoon remaining mustard over lamb. Sprinkle with paprika; broil 9 minutes. |
