Tarragon Chicken With Linguine |

Super Foods cookbook. Ingredients:
1 lb chicken breast, boneless and skinless |
6 ounces linguini noodles |
1 cup chicken stock |
8 mushrooms, sliced |
2 carrots, julienned |
1 onion, thinly sliced |
1/4 cup fresh parsley, minced |
1/2 teaspoon dried tarragon |
Directions:
1. Cut the chicken into bite sized strips. Set aside. 2. Cook the pasta according to package directions. Drain and set aside. 3. In a large frying pan over medium heat, bring the stock to a simmer. 4. Add the chicken and cook for 7 minutes, stirring frequently. 5. Add the mushrooms, carrots, onions, parsley and tarragon. Cook until the chicken is tender, about 5 minutes. 6. Add the linguini to the pan. 7. Toss to combine. Heat until everything is heated through. |
