Tarragon Chicken and cream cheese filling for cheese gougeres or any puff pastry Ingredients:
3 boneless skinless chicken breasts |
8 ounces cream cheese |
1/2 cup fresh tarragon, chopped |
3 scallions, finely diced |
1 tablespoon lemon juice |
Directions:
1. Lightly poach chicken breasts, just until opaque. Cool completely, then mince fine by hand or in food processor. Mix in softened cream cheese, tarragon, and scallions. For best flavor, refrigerate overnight before filling puff pastry or spreading on crackers. |
