Delicious way to serve fresh green and yellow beans. Another favorite recipe and photo from Summer Recipes 1996 Ingredients:
1 c fresh green beans (about 1/4 lb) |
1 c fresh wax beans (about 1/4 lb) |
1/4 c chopped green onions |
2 tbl butter |
1 tbl pine nuts, toasted |
2 tsp fresh or 1/2 tsp dried tarragon leaves |
note: to toast pine nuts, cook in a small skillet over medium high for 5 to 7 minutes until golden, stirring ocassionally |
Directions:
1. Place green and yellow beans in steamer basket in medium saucepan 2. Steam until crisp tender 3. Empty beans from steamer basket into same saucepan when tenderand combine with remaining ingredients 4. Cook over medium low about 1 to 2 minutes to melt butter and blend flavors, strring ocassionally 5. 4 1/2 C servings |
