Tarhana is a kind of Turkish tomato-onion based sourdough that's used in this traditional soup. We had this during our time spent in Turkey and it was delicious. Ingredients:
1/2 cup tarhana |
1 tablespoon olive oil |
4 cups water |
tomato paste |
butter |
grated romano cheese |
Directions:
1. Bring the water and olive oil to a boil. 2. Add the tarhana and stir constantly for approximately 20 minutes. 3. Add a little tomato paste and salt to taste. 4. Serve with grated romano cheese and a little bit of butter in each bowl. |
