Tarator is the bulgarian version of the greek tzatziki. This is my diary-free version, but you can always use your favorite fat-free plan yogurt. FatBeaters is my wordpress food blog :) Ingredients:
200 g cucumber |
250 g organic soy yogurt, plan |
1 tbsp parsley |
1 garlic clove |
1/2 tbsp walnuts, chopped |
Directions:
1. First, cover a colander with a cheese cloth. Put the colander on a cup or other bowl. Pour soy yogurt into the covered colander. Place in the refrigerator and allow to dry for about 3-4 hours. I use to do this step the night before, so i leave it in the refrigerator overnight. 2. The next day the soy yogurt is pretty much like the total zero greek yogurt. 3. Transfer the thick soy yogurt into a mixing bowl. 4. Peel the cucumber and slice from the long side. Remove the seeds with a smoll spoon. Grate the rest of the cucumber and squeeze the excess water of it, by squeezing with your hands. Add it to the yogurt. Finelly chop the garlic clove and the parsley. Add them to the yogurt. Stir well with a spoon, until all ingredients are well blended together. Divide into two serving bowls. Sprinkle lightly the top with chopped walnuts. Keep in refrigeratore at least one hour before serving. |
