Coming from one of the Stepfather’s momma’s cook-notes: Honey is the basic flavour in these classic light fluffy dough Italian cookies. Americans call these a Sweet Roll . Ingredients:
3 1/8 cups white bread flour |
2 packages yeast |
2 large eggs, beaten |
2 tbsp olive oil |
2 1/2 tbsp “strong honey” (don’t know what this means, i’m guessing stong-flavoured like chestnut or buckwheat) |
Directions:
1. Pour the flour onto your work surface and make a hole in the center with your fist. 2. Dilute the yeast with 2/3 cup warm water and pour into the hole. 3. Knead together as you would bread dough. 4. Leave the dough in a warm place to rise for 1 hour, then add the eggs, oil, and honey and knead again. 5. Shape the dough into about 14 individual figure 8's and arrange them at least 2-3 inches apart on an oiled baking sheet. 6. Leave them in a warm place to rise for up to 4 hours (the longer, the fluffier and lighter the cookie). 7. Bake them in a 375 degree oven for about 15 minutes. 8. Cool and store, or serve. |
