Taragon Chicken Salad Sandwich |

A little twist on the typical chicken salad sandwich. Ingredients:
3 cups of cooked diced chicken - mix of white and dark meat |
3 t of chopped green onion |
2 t of chopped italian parsley |
2 t of chopped taragon |
1/2 c of mayo |
1 t of poupon mustard |
1 t of lemon juice |
1 t of sweet pickle juice - like bread and butter pickles |
1 t of salt or to taste |
1 t of pepper |
Directions:
1. Mix all of the above - chill if you have time 2. Split a sandwich roll in half. 3. Drizzle with EVOO. 4. Lightly salt and pepper and broil 1-side until light brown 5. Prepare the roll with a light coating of mayo, lay a bed of arugula 6. Add slices of tomato and bacon 7. Add a big pile of the chicken salad and tear in. |
