A favorite recipe in my family; can be made healtier with less butter. Ingredients:
8 chicken breasts (thin sliced) |
1/2 cup italian seasoned breadcrumbs |
1/2 cup parmesan cheese, grated |
1 1/2 teaspoons oregano |
1/2 teaspoon garlic powder |
1/4 teaspoon pepper |
1 tablespoon parsley, chopped |
4 ounces monterey jack cheese, shredded |
5 tablespoons butter, melted |
Directions:
1. Combine crumbs, parmesean, oregano, garlic, and pepper in a bowl. 2. Sprinkle each thin-sliced breast with cheese; roll-secure with tooth picks. 3. Melt remaining butter; roll chicken in butter and then dip in bread crumb mixture to cover. Lay in sprayed glass baking dish, drizzle prepared chicken with extra melted butter. 4. Refridgerate for four hours. 5. Bake at 425 degrees for 20-25 minutes. |
