This salad is refreshing and full of flavor. The recipe is from the National Watermelon Promotion Board. The recipe calls for sugar in the dressing, but you can substitute Splenda low-calorie sweetener. Ingredients:
1/2 cup cider vinegar |
1 cup water |
1/2 cup sugar or splenda to taste |
1 tablespoon poppy seeds |
salt and pepper to taste |
1 bunch scallions, trimmed and chopped |
3 cups seedless watermelon balls or small chunks |
2 cucumbers, peeled, seeded and sliced into thin slices |
Directions:
1. Mix together the vinegar, water, sugar and poppy seeds in a bowl and season with salt and pepper to taste. 2. Stir in the chopped scallions. 3. Place the watermelon and cucumber in a serving bowl and pour the marinade over the top. 4. Serve immediately or cover and refrigerate for a couple of hours before serving. 5. Toss gently before serving. |
