The zippy citrus and raw vegetable flavors blend well together. Ingredients:
2-1/4 cups uncooked spiral pasta |
2 tablespoons lemon juice |
3 plum tomatoes, sliced |
1/2 cup chopped green pepper |
1/2 cup sliced radishes |
/12 cup chopped peeled cucumber |
for dressing |
1/3 cup picante v8 juice |
1/4 cup orange juice |
2 tablespoons lemon juice |
2 tablespoons chopped green onion |
1 tablespoon canola oil |
1-1/2 teaspoons sugar |
1 teaspoon grated lemon peel |
1 teaspoon grated orange peel |
1/2 teaspoon salt |
1/2 teaspoon dill weed |
Directions:
1. Cook pasta according to package directions, adding lemon juice to the water. Drain and cool. 2. In a large bowl, combine the pasta, tomatoes, green pepper, radishes and cucumber. In a jard with a tight-fitting lid, combine the dressing ingredients; cover and shake well. Pour over salad; toss to coat. Cover and refrigerate until serving. |
