For the big-appetite kids: This is a great lunch for the kids to take to school. LIning the tacos with lettuce prevents thenm from becoming soggy. Ingredients:
1 (85 g) can starkist lemon and cracked pepper tuna fillets |
2 tablespoons mayonnaise, style dressing |
2 hard taco shells |
2 lettuce leaves |
1 tablespoon shredded carrot |
1 tablespoon part-skin mozzarella cheese, shredded |
1 tablespoon salsa |
Directions:
1. Add the mayo to the tuna. 2. Place the lettuce leaves in the bottom of the taco shells. 3. Divide the tuna salad between the two tacos.and top with shredded with carrots, cheese and tangy salsa. 4. To keep it altogether, wrap it tightly in plastic wrap before transferring to a resealable container. Great for active, on-the-go kids. |
