So easy and so awesome! Everyone will think they were so much harder than they were! Ingredients:
1/2 c finely chopped ham |
1/4 c roquefort cheese, crumbled |
1/4 c sour cream |
1/4 t fresh lemon juice |
dash freshly ground black pepper |
36 cherry tomatoes (i like to use a mix of red and yellow, when i can find the yellow ones) |
*chives - optional |
Directions:
1. In a small bowl combine all ingredients except the tomatoes 2. Slice the tops off of the tomoatoes and scoop out most of the pulp (reserving for salsa, or to add to pasta, omlettes, etc) 3. Spoon 1/2 t of the ham/cheese mixture into each tomato shell 4. Serve chilled 5. *Top with chives if desired |
