This is a Jamaican side dish and is often served with grilled pork or jerk chicken. Use can pineapple and reserve liquid. Spinach or mustard greens can also be substitued for cabbage. Ingredients:
1 lb cabbage |
14 ounces pineapple slices, drained and cubed |
1 tablespoon sugar |
3 tablespoons white vinegar |
1 tablespoon vegetable oil |
1 teaspoon onion, finely chopped |
1/2 teaspoon orange rind, grated |
1/4 teaspoon ground ginger |
Directions:
1. Cut cabbage into 6 wedges. 2. In a skillet, bring 1/2 cup of the reserved pineapple liquid to a boil. 3. Add pineapple into cubes add to cabbage with remaining ingredients. 4. Cover, reduce heat and simmer until crisp tender or for 5 minutes. |
