A perfect way to serve mashed potatoes without soaking them in fattening gravy! Ingredients:
2 lbs potatoes, peeled and cut into 3/4 pieces |
1 cup nonfat plain yogurt |
1/4 cup green onion, minced |
1 tablespoon margarine |
Directions:
1. Place potatoes in boiling water and cook until tender (about 20 minutes). Drain. 2. In a bowl, combine potatoes, yogurt and margarine. 3. Beat with electric mixer until fluffy. 4. Mix in green onion; season with salt and pepper to taste. 5. Serve hot. |
