Tangy Marinated Yellow Squash (No Cooking)
Ingredients:
4 medium yellow squash, thinly sliced
1/2 cup green onion, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
2 tablespoons wine vinegar
3/4 cup sugar
1 teaspoon salt
1 teaspoon pepper
1/3 cup oil
2/3 cup cider vinegar
1 garlic clove, crushed
Directions:
1. Toss yellow squash, green onion, green pepper, and celery together.
2. Mix the marinade ingredients together.
3. Pour marinade over squash mixture.
4. Refrigerate for at least 12 hours.
