From 17 Magazine a long time ago when they used to have recipes! Ingredients:
1 1/2 cups flour |
1/4 cup sugar |
1/2 cup butter, softened |
2 tablespoons flour |
2 eggs |
3/4 cup sugar |
1/4 teaspoon baking powder |
2 tablespoons lemon juice |
1 tablespoon confectioners' sugar |
Directions:
1. Preheat oven to 350 degrees. 2. Make crust: In a medium-size bowl, combine flour and sugar. Using a pastry blender or two knives, cut butter into mixture until it resembles coarse crumbs. Turn mixture into a greased 9 X 9 inch pan, and press with fingers evenly over bottom of pan. Bake for 15 minutes. 3. Meanwhile, make topping: Combine all remaining ingredients, except confectioner's sugar, in a medium-size bowl; mix until well-blended. When crust is done, pour topping over crust, and bake for another 20 minutes. 4. Let cool, then sprinkle with confectioner's sugar, and cut into 2 1/4 by 3 inch bars. |
