This side dish nicely complements pork chops. It's not sweet, but instead a bit tangy. You can play with the spices. I usually add a bit more coriander than the recipe calls for. The original included a head of roasted garlic. Read more . Bit I don't usually add it - because I don't think that far into the future. Ingredients:
3 ea granny smith apples, peeled, cored, and finely chopped |
1/4 cup chicken broth |
1/2 tb apple cider vinegar |
1/2 tb balsamic vinegar |
1/4 tsp ground cumin |
1/4 tsp ground coriander |
2 tb pure maple syrup |
salt and cayenne pepper |
Directions:
1. Combine the apples, chicken broth, vinegars, cumin, and coriander in a medium saucepan. Cook over medium heat, stirring frequently, about 15 minutes or until the apples are mushy. Remove from the heat and stir in the syrup, salt, and cayenne to taste. 2. Let cool to room temperature before serving. 3. From The Great American Grilling Book |
