Tangy Green Beans with Pimiento |

Ingredients:
1 1/2 pounds green beans, trimmed |
3 bacon slices |
1 large onion, chopped |
3 garlic cloves, minced |
1 (2-ounce) jar diced pimiento, drained |
1/4 cup red wine vinegar |
1 teaspoon sugar |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon cumin seeds |
Directions:
1. Cook green beans in boiling water to cover 4 to 5 minutes. Drain and plunge beans into ice water to stop the cooking process; drain and set aside. 2. Cook bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reserving 2 tablespoons drippings in skillet. Crumble bacon, and set aside. 3. Sauté onion and garlic in hot bacon drippings over medium-high heat until tender. Stir in pimiento and next 5 ingredients. Stir in green beans; reduce heat, cover, and simmer 5 minutes. Sprinkle with bacon. |
