This crunchy salad tastes really fresh and light, a perfect partner to succulent roast meat. Ingredients:
1 lemon, zest and juice |
3 tablespoons extra virgin olive oil |
2 fennel, cored and thinly sliced |
5 ounces arugula |
1/2 red onion, thinly sliced |
Directions:
1. Whisk together the lemon juice and oil then season well with salt and pepper. 2. Just before serving, toos through the fennel, arugual, onion and lemon zest. 3. Pile up on a serving platter and eat straight away. |
