Tangy, Creamy String Bean Soup (Hungary) |

Ingredients:
3 tablespoons all-purpose flour |
2 1/2 cups milk |
1 cup sour cream |
1 lb fresh green beans, trimmed, quartered |
1/4 cup white wine vinegar |
1/8 teaspoon salt, to taste |
Directions:
1. In a saucepan combine flour & ONLY 1/4 cup of the milk, stirring until no lumps remain, then add the remaining milk & sour cream & stir to combine. 2. Turn the heat on to medium-high & bring just to a simmer, then reduce heat to medium-low & simmer for 15 minutes. 3. Add green beans & cook until tender, about 5-8 minutes. 4. Stir in the vinegar & season to taste with salt before serving. |
