Tangy Cheese-Topped Spuds (With Horseradish) |

I found this on another web site... it has a very unique flavour with the horseradish but we enjoyed it thoroughly. Also submitting this recipe to test the Zaar category database system. Ingredients:
3 ounces cream cheese, softened |
1/3 cup sour cream |
1/4 cup green onion, finely chopped |
2 1/2 teaspoons prepared horseradish |
1 teaspoon lemon juice |
1 teaspoon parsley (or 1 tbsp fresh) |
1/8 teaspoon salt |
2 ounces shredded cheddar cheese |
4 potatoes |
Directions:
1. Preheat toaster oven to 300°F. 2. Cook potatoes in microwave oven till done. 3. Meanwhile, in mini-mixer, blend cream cheese & sour cream until smooth & pour into a bowl. Add onion, horseradish, lemon juice, parsley & salt to bowl & mix well. 4. With a sharp knife, cut an X in the top of each potato & scoop out pulp with a spoon. Add to topping mixture with grated cheese & blend well. 5. Scoop mixture back into potato jackets & top with abit more grated cheese. 6. Cook in toaster oven for 10 - 15 minute 7. Broil 5 min to melt cheese on top of potatoe. |
