A colourful and tangy salad to enjoy this summer Ingredients:
vinaigrette |
1/4 cup orange juice |
1 tbsp orange zest |
2 tbsp olive oil |
1 tsp honey |
1 tbsp balsamic vinegar |
salt and pepper to taste |
salad |
2 cups cooked, sliced & cooled beets |
1 small red onion, thinly sliced |
1/2 cup crumbled feta |
1 tbsp dillweed, chopped |
1/3 cup chopped walnut pieces |
Directions:
1. Combine all of the VINAIGRETTE ingredients and refrigerate. 2. Meanwhile combine all of the SALAD ingredients with the exception of the walnuts. 3. Toss dressing & salad just before serving. 4. Top with walnuts. |
