Serve this versatile recipe as an appetizer with lime-flavored baked tortilla chips.
Ingredients:
1 (15-ounce) can garbanzo beans, rinsed and drained
1 (15-ounce) can dark red kidney beans, rinsed and drained
1 (15-ounce) can pinto beans, rinsed and drained
1 cup frozen whole kernel corn, thawed
1 small red onion, finely chopped
2 (4.5-ounce) cans diced green chiles
1 (4-ounce) jar diced pimientos, drained
1 teaspoon grated lime rind
1/4 cup fresh lime juice
1 teaspoon hot sauce
1/2 teaspoon ground cumin
1/4 teaspoon salt
garnish: lime slices
Directions:
1. Stir together first 12 ingredients. Cover and chill until ready to serve. Garnish, if desired.
