Tangy Apple and Almond Salad |

I was recently at a farmers' market where I ate some salads made from the produce on sale. One of them was an outstanding apple salad - which I've recreated with this recipe. It is absolutely critical to use excellent quality apples for this one! I like to use pink lady apples bought from the farmer (instead of the supermarket). Ingredients:
3 large apples |
1/2 cup fresh parsley |
1/2 cup almonds |
2 tablespoons white wine vinegar or 2 tablespoons rice wine vinegar |
2 tablespoons olive oil |
1 lemon |
1/4 cup brioche breadcrumbs (optional) |
Directions:
1. Chop almonds 2. Roast almonds gently in a heavy bottom fry pan on medium heat until golden brown. 3. Thinly slice the apples. 4. Sprinkle with lemon juice as the apple slices are added to the bowl and stir gently. 5. Chop parsley very finely and add to apples. 6. Drizzle vinegar and olive oil over the top and stir again. 7. Finish by sprinkling almonds and breadcrumbs on top. 8. Stir before serving. |
