Refreshing salad for the Summer 4th of July BBQ Weekend! Enjoy! :) Ingredients:
1 fennel bulb, sliced thin |
2 tangerines, peeled and sliced |
a handful of toasted pine nuts (optional) or favorite nut choice |
the juice of 1 tangerine |
a squeeze of fresh lemon juice |
a handful of fresh mint, chopped |
3 t extra virgin olive oil |
pinch of salt |
pepper |
a touch of romaine lettuce |
*optional: chilled sliced beets, sliced radish, black olives, red onion chopped or a touch of crumbled goat cheese |
