Tandoori Chicken Tostadas |

This is a fusion dish that will have your friends at your next party raving. Tandoori chicken combined with Mexican flavours to create something unique. Ingredients:
3 chicken breasts |
3 cloves garlic, minced |
1 teaspoon salt |
1/2 teaspoon freshly ground pepper |
1 tablespoon tandoori powder(can use store bought initally) |
3 tablespoons lemon juice |
1 cup plain yogurt |
12-15 tortillas |
1 cup of fresh corn kernels |
1/4 cup cilantro springs |
1/2 cup red onion diced |
1/4 cup chopped mint and cilantro mixed with 1/2 cup yogurt |
Directions:
1. Preheat a grill. Score chicken breasts, then add a marinade of the yogurt, garlic, salt, pepper, chili flakes, lemon juice, and tandoori powder. Marinate the chicken breasts for 6 hours minimum 2. Using a cookie cutter, cut individual slices out of the tortillas, and bake them in the oven for about 3-4 minutes at 375 degrees. 3. Place marinated chicken on the grill and cook until juices run clear when pierced with a fork. About 7 minutes per side. 4. Slice the chicken when done and add a slice to the tostadas, top with corn kernels, cilantro, and a little red onion. 5. Finish the tostada with a very light drizzle of the yogurt mint and cilantro sauce |
