Tandoori Chicken Burgers With Minty Cucumbers |

This is from my Low Carb Cookbook. You can use ground turkey instead of chicken. I would serve these with home fries. Ingredients:
1/4 cup dry breadcrumbs |
2 teaspoons curry powder |
1/4 teaspoon salt |
1/4 teaspoon cayenne pepper |
1 lb ground chicken |
2 tablespoons plain yogurt |
4 mixed-grain hamburger buns |
1 cucumber, thinly sliced |
1/2 cup red onion, thinly sliced |
1/4 cup fresh mint, chopped |
1 tablespoon balsamic vinaigrette |
1/4 teaspoon salt |
Directions:
1. In a large bowl combine bread crumbs, curry powder, salt and cayenne. 2. Add ground chicken and yogurt; mix well. Shape into 4 patties. 3. Grill for 14-18 minutes or until patties are no longer pink. Serve on toasted buns with minty cucumbers. 4. Minty cucumbers: In a medium bowl combine all of the salad ingredients. Toss well. |
