Easy chicken with peas and rice.
Ingredients:
2 whole chicken breasts
1/2 teaspoon salt
3 tablespoons vegetable oil
2 green onions, sliced
1 (7 ounce) package frozen peas
1 cup mushroom, sliced
1 tablespoon cornstarch
1 (10 ounce) can chicken broth
1/4 cup toasted slivered almonds
cooked rice
Directions:
1. Cut chicken into 1 inch pieces.
2. Sprinkle with salt.
3. Stir fry chickn in oil in skillet over medium heat until tender.
4. Remove from chicken from skillet.
5. Add onions, peas and mushrooms to skillet and stir fry for 1 minute.
6. Dissolve cornstarch in a little broth.
7. Stir in remainder of broth.
8. Stir in cornstarch mixture.
9. Simmer until thickened.
10. Add almonds and chicken.
11. Heat.
12. Serve over rice.
