This recipe came from my mom. It was a favorite of my family growing up, and my husband loves it. The whole thing is gone in a day! Can be frozen.
Ingredients:
2 beaten eggs
3/4 cup milk
1/2 cup fine dry breadcrumb
1/4 cup chopped onion
2 tablespoons snipped parsley
1 teaspoon salt
1/2 teaspoon ground sage
1/8 teaspoon pepper
1 1/2 lbs ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon dry mustard
Directions:
1. Combine eggs and milk in medium bowl.
2. Stir in bread crumbs, onion, parsley, salt, sage and pepper.
3. Add ground beef.
4. Mix with hands.
5. Place in loaf pan.
6. Shape into mold. (freeze now if using for once a month cooking).
7. Bake at 350 degrees for 1 hour and 15 minutes.
8. Mix ketchup, brown sugar, and dry mustard.
9. Glaze meatloaf with ketchup mixture.
10. Cook 10 minutes longer.
