serve with basmati rice Ingredients:
2 tbs oil |
3 cloves garlic |
2 tsp fresh ginger |
1 large onion |
1 tsp garam masala |
1/2 tsp cumin |
1/16 tsp cayenne (or to taste) |
2 cups chicken broth (or vegetable broth) |
2 tbs tomato paste |
2 tsp tamarind paste |
1 tbs maple syrup |
1/2 tsp salt |
1 cup dried lentils (red, yellow or orange) |
1/2 tsp whole cumin seeds |
Directions:
1. Sautee garlic and ginger for 30 seconds, add onion and sautee for 2-3 minutes until soft. 2. Add garam masala, cumin and pinch of cayenne. 3. Add 2 cups broth, bring to a boil, reduce to med-low and simmer partially covered for 30 minutes, until soft. add water as needed. Combine tomato paste, salt, tamarind, syrup and mix well. Add to lentils and simmer another 10 minutes or until tender. |
