These little meatballs are excellent when wanting something different instead of the same of meatballs! They are great little appetizers to serve as an appetizer for your Mexican dinner party(with or without a Margarita! Read more ! )
Ingredients:
1 1/2 pounds ground beef
1 cup finely chopped onions
1/2 cups finely chopped green bell pepper
1 to 1 1/2 tablespoons olive oil
1 egg
1/2 cup sliced green onions
1 can(10 oz.) mild enchilada sauce
1 can(8 oz.) tomato sauce
2 cups crumbled cornbread ( i use 1 box jiffy brand corn bread and make it according to the package directions)*you can also make and use a mexican cornbread if preferred
1/2 cup sliced black olives (more or less depending on taste)* these are optional
salt
1 teaspoon cracked black pepper
8 oz. mexican blend shredded cheese or you can use cheddar or pepper jack cheese
Directions:
1. Preheat oven to 350 degrees.
2. Saute onion and bell pepper in olive oil until tender.
3. In a large mixing bowl, combine cornbread with 1/2 of the enchilada sauce.
4. Add onion mixture,egg and ground beef
5. Season with salt and pepper and shape or roll into 1 inch balls.
6. Place on baking pan lined with foil or spray a baking pan with non stick spray.
7. Bake for 15 to 18 minutes
8. Remove from oven and let cool slightly.
9. Place meatballs in chaffing dish or crock pot(on low)
10. Mix together remaining enchilada sauce and tomato sauce.
11. Pour sauce over meatballs.
12. Sprinkle with cheese, black olives, and green onions.
13. Serve warm with pretzel rods as tooth picks
