A different fresh and easy way to serve fish Ingredients:
4 ounces angel hair pasta |
2 tbl vegetable oil |
1 tbl grated fresh ginger |
2 teas minced garlic |
6 small fillets about 4 oz each, patted dry (any whitefish is good) |
1 teas salt |
1/4 teas pepper |
1 can (14.5 oz) petite diced tomatoes, undrained |
1 can (14 oz) chicken broth |
2 teas soy sauce |
1/2 teas crushed red pepper flakes |
2 tbl lime juice |
2 tbl chopped fresh basil |
1 tbl chopped fresh cilantro, optional |
1 teas sugar |
1/2 teas sesame oil |
4 cups thinly sliced napa cabbage |
1/4 cup chopped green onions |
Directions:
1. Cook pasta according to directions, cool & set aside 2. Heat vegetable oil in large skillet over medium high heat. 3. Saute ginger and garlic about 30 seconds, until fragrant :-) 4. Season fish with salt & pepper 5. Add fish to skillet and cook about 2 minutes per side until lightly browned 6. Stir in undrained tomatoes, chicken broth, soy sauce and red pepper flakes 7. Bring to boil 8. Reduce heat to low, cover and simmer 20 minutes until fish flakes easily 9. Gently remove fish from skillet, set aside 10. Add lime juice, basil, cilantro, sugar and sesame oil to skillet, stir 11. Add cabbage and pasta, simmer uncovered, 1 - 2 minutes 12. Divide noodle mixture into 6 serving bowls 13. Top with a piece of fish 14. Ladle additional broth over fish & noodles 15. Garnish with green onions 16. Serve immediately |
