I have NO idea where I got this recipe. But I make it for a day in the snow here in Upstate NY. Pack it in a thermos for a cold weather outting. Ingredients:
1/4 cup onion, minced |
3 tablespoons butter |
3 tablespoons all-purpose flour |
1/2 teaspoon salt |
1/4 teaspoon ground black pepper |
1 cup milk |
4 cups tomato juice |
1 small bay leaf |
fresh minced parsley for color, if desired |
Directions:
1. In large saucepan, saute onion in butter until softened. 2. Add flour, salt and pepper. Cook 1 minute or until bubbly. 3. Gradully whisk in milk and tomato juice. 4. Cook over medium heat, stirring, until thickened. 5. Add bay leaf. Simmer 2 minutes. 6. Remove bay leaf. 7. Stir in parsley if desired. 8. Pack in thermos to transport. 9. This makes 5 1/2 cups. |
