My absolute favorite candy bar is a Take 5, so that was the inspiration for these bars. Though they are a little time consuming, the end result is oh so sweet, salty & super good... Ingredients:
2 cups crushed pretzels |
1 cup melted butter |
1 cup reduced fat peanut butter |
1/2 cup powdered sugar |
1/4 tsp salt |
1 cup evaporated milk |
2 egg yolks |
8 ounces semisweet chocolate, chopped |
1 jar caramel topping |
Directions:
1. Preheat oven to 400 degrees F. 2. Combine pretzels & butter in the bottom of a 9X13 non stick pan & bake for 9 minutes (or until pretzels begin to brown slightly). Meanwhile, combine peanut butter, powdered sugar & salt. Microwave on high for 1 minute so that mixture is smooth. 3. Pour the peanut butter over the pretzels & spread carefully until evenly covered. Chill for an hour or until peanut butter has hardened. 4. Next, whisk (constantly) the evaporated milk & eggs in a medium sauce pan over medium-low heat until it thickens (do NOT boil). 5. Place chopped chocolate in a medium sized bowl & slowly add in the hot milk mixutre. Stir until chocolate is melted & smooth. 6. Chill in the fridge for 1-2 hours or until the chocolate layer has had time to cool & firm up. 7. Before serving drizzle with caramel topping (per taste). |
