Hearty main course salad that we love to serve at halftime. Ingredients:
3 lbs. new potatoes boiled, quartered, unpeeled |
1 pound of polish kielbasa, sliced diagonally |
1/4 cup of chopped drained capers |
1/2 cup of julienned pimentos |
1 cucumber, peeled and thinly sliced |
1 bunch of scallions, sliced on the diagonal, use some of the green part |
1 egg plus 1 egg yolk |
1 teaspoon of dry mustard |
1 teaspoon of freshly squeezed lemon juice |
1/4 teaspoon of red wine vinegar |
2 dashes of favorite hot sauce |
1/2 cup of olive oil |
1 cup of light salad oil |
2 tablespoons of dijon mustard |
salt and pepper (fresh ground black pepper, if you please) |
Directions:
1. Put the potatoes, kielbasa, capers, pimentos, cucumbers and scallions in a large bowl. 2. In a blender or food processor, add the egg and egg yolk, dry mustard, lemon juice, hot sauce and vinegar. 3. Process 10 seconds. 4. Add oil very slowly in a steady stream (making mayo here). 5. Fold in dijon mustard and adjust the salt and pepper level to taste. 6. Pur over the salad ingredients and toss very well. |
