I found this recipe in my mother-in-law's recipe box; given to her by her friend Helen Hitchen. They are both gone now but their recipe LIVES on. Ingredients:
1/2 cup brown sugar, packed |
1 (13 1/4 ounce) can pineapple chunks in juice |
2 tablespoons cider vinegar |
1 (12 ounce) can spam |
1 cup green bell pepper |
2 tablespoons cornstarch |
2 tablespoons water |
Directions:
1. Mix brown sugar and cornstarch in a sauce pan. Add water,juice from canned pineapple and vinegar; cook until thick. Cut Spam into 1 inch cubes and stir into sauce. Add pineapple chunks, cut bell pepper into 1 inch chunks and add into the sauce. Keep cooking until hot; at least 10 minutes. Serve over hot rice. |
