This is an authentic Tahini Recipe. The instructions have been modified from the original instructions for clarity and ease. Ingredients:
1/4 cup olive oil (more if needed) |
1 cup sesame seeds |
Directions:
1. Preheat your oven to 350°F (177° C). 2. * Spread your sesame seeds on a roasting tray, and toast in the oven for 15 minutes, stir occasionally to toast evenly. Do not allow to brown as this impairs the flavor. 3. * Remove the sesame seeds from the oven and allow to cool briefly. 4. * Put the toasted sesame seeds in your blender and add half the oil. 5. * Blend the mixture, adding additional oil gradually to form a smooth paste. Add more oil if needed for smooth consistency but make sure that it is still a paste and not too thin. 6. * When the mixture is evenly smooth, and further blending does not further refine the texture, transfer your tahini to a tight fitting glass jar using a flexible spatula, if you have one, to reduce waste. 7. Tahini may be kept in the refrigerator for many weeks in a well-sealed jar. |
