Tahina Salad

Quick side dish/salad. I have topped baked halibut with it and it was yummy.
Ingredients:
2 seedless cucumbers
2 tomatoes
3 cloves garlic
1/2c tahina
1/2c lemon juice
1 bunch parsley
salt to taste
cold water
Directions:
1. Crush garlic with salt (I mince it then smash with back of spoon)
2. Mix with half the lemon juice
3. Now stir in tahina and mix well
4. Add rest of lemon juice and enough cold water to achieve thick, smooth cream.
5. Beat vigorously-consistancy like pea soup
6. Taste and add lemon and salt until fairly tart
7. Finely chop and drain tomatoes, cucumbers and parsley.
8. Mix all together and serve.
9. Enjoy!
