Tacqueria Style Beef Tacos |

I got this recipe from a friend of mine who was from Mexico City. He owned and operated a taco cart and taught me how to make 'real' Mexican tacos. Ingredients:
1 boneless beef top sirloin, cut into big chunks |
1 small onion, quartered |
5 cloves of garlic, slightly smashed |
salt and pepper |
vegetable oil |
for salsa verde |
2 cups tomatillos, husked and quartered |
1 small onion, quartered |
4 cloves of garlic, peeled |
1 jalapeno, roughly chopped |
juice of 3 limes |
1 cup of chopped cilantro |
salt |
corn tortillas (homemade if you have the time) |
for garnish |
chopped onions |
chopped cilantro |
sliced radishes |
limes |
Directions:
1. In a large stockpot, add beef top sirloin, onions, garlic, salt and pepper and cover with water. 2. Bring to boil, then reduce heat and simmer until meat is tender. 3. Once meat is tender, remove from pot and let rest on a cutting board. 4. Once cooled, cut sirloin up into either strips or bite-size chunks. 5. Heat enough vegetable oil to coat bottom of a large skillet. 6. Over medium-high heat, 'fry' the beef and brown slightly. Set aside. 7. Make the salsa verde by adding all ingredient items to a blender and blending until smooth. 8. Warm the corn tortillas in a microwave by covering with a damp paper towel and heating for 30 seconds. 9. To assemble: 10. Take corn tortilla and add meat, salsa verde and garnishments. 11. Squeeze lime juice over everything and eat immediately. |
