DH's favorite salsa-type dip. I've been making it for the family for about 30 years and they still love it. Not for someone that doesn't like olives! Ingredients:
4-5 medium tomatoes (peeled) |
5-6 scallions |
1/3 of 10 oz jar salad olives or chopped green olives with pimentos |
3-5 hot peppers |
oil |
vinegar |
salt and pepper, to taste |
Directions:
1. Chop tomatoes, onions, olives, and peppers (wear gloves!) very finely and mix together. 2. Salt and pepper to taste. 3. Toss with a small amount of vinegar and oil. 4. Serve with large Fritos or other sturdy corn chips. |
