I'm not sure where I got this recipe from, but I have had it for over 30 years. I usually garnish the top of the salad with crushed tortilla chips. Serving size is approximate (depending on appetites) as a side dish. NOTE: Cooking time is time it takes to cook the tortellini. Ingredients:
9 ounces cheese tortellini |
1 (15 ounce) can red kidney beans, drained and rinsed |
1 medium tomato, seeded and coarsely chopped |
1/2 green pepper, coarsely chopped |
2 tablespoons olives, sliced |
1/2 cup salsa (you pick the heat, but i use medium ) |
1/3 cup thousand island dressing |
1/2 teaspoon cumin |
Directions:
1. Cook the tortellini. Drain and rinse with cold water. 2. Combine beans, tomato, pepper and olives in a large bowl. Add tortellini and toss. 3. Make the dressing - combining the salsa, thousand island salad dressing and cumin. 4. Just before serving, pour dressing over the tortellini salad mixture and toss. |
